Size

Corn Tortillas made from Nixtamalized corn. No preservatives.  Vacuum packed in inert gas.

Note: For best results, after opening, use all the tortillas within 2 days even if refrigerated.


Preparation Instructions at least Min. 15 Minutes Before Use
1.  Let the pack breathe for at least 10 minutes by cutting a small hole in plastic. Note the bag will inflate as well and the tortillas will expand slightly.

2. Separate the tortillas by massaging them back and forth, first one way, then second, turn the pack 90 degrees and massage again.  Note the tortillas will separate like a deck of cards.

For Use
1. Pre-Heat up your pan at least 5 minutes before to a toasty temperature between 160 and 180 degrees C.  Best to use a well seasoned cast iron pan/comal or a thick stainless pan. 

Complete opening the pack by cutting the back completely across with scissors or a sharp knife.


2.  Remove the individual tortillas and place one at a time on your pan briefly, 10-15 seconds max.  Flip the tortilla and let sit for another 10-15 seconds.  Flip a third time for 10 seconds.  You will see the tortillas soften and develop small bubbles.

3.  Remove from pan and immediately place in cotton towel and wrap, or serve.

4.  If you are making more than one tortilla, continue to heat them up individually and place in the towel or tortilla basket.

Note that the steam from the tortillas themselves further softens them.  Your tortilla should be soft and will easily bend.

Making Totopos (Tortilla Chips)
Left over or dry tortillas can be made into totopos, aka, tortilla chips, by cutting the tortillas into quarters or thirds, and deep frying them in oil at least 190 C for 2-3 minutes.  Drain well and slightly salt to remove additional oil.
